Whipped Cream Troubleshooting: Why It Won't Hold

Why won't my whipped cream hold, or why does it collapse?

Collapse is a temperature or fat problem before it is a gas problem. Fat that is liquid when you dispense cannot hold a bubble wall, so the foam looks right for a few seconds and then weeps.
